Biryani was brought to southern asia by iranians travellers. Biryani Means "Fired" or "Rosted" derived from Persian word. It is a rich based with spices, rice and meat. Biryani is one of the famous cuisine in India.

Ingredients to Make a Mutton Biryani:

1 Kg Rice (Basmati rice would be ideal), 1 Kg Mutton, 10 gms Cardamom, 10 gms Cinnamon, 10 gms Cumminseed, 10 gms Cloves, 40 gms Ginger, 20 gms Garlic, 100 gms Green Chilies, 50 gms Fried Onion, 1 bunch Coriander Leaves, 1bunch Pudina, 2 Lemon, 1/4 Curd, 1/4 kg Ghee

  How to make meat Mutton Biryani:

1) Wash mutton properly and take it in a bowl.

2) Make a paste of green chilies, ginger, garlic, spices, fried onion, and mix them all.

3) Then add the paste to the meat.

4) Then add curd to the meat and Leave it to marinate for half an hour.

5) Fry chopped onions and ground spice.

6) Fry until onions turn golden brown& now add the marinated meat and fry well.

7) Take 2 liters of water and heat it till boils.

8) When water boils well put the rice in the vessel.

9) When the rice is half cooked spread it on the meat and spices mixture as layer. Take some more rice and again spread a second layer. A third layer can also be added.

10) Make a mixture of one cup of boiled water and 1/4 kg ghee and spread it on the rice.

11) Now cover the vessel with a plate and seal the edges with dough paste (Atta). Cook it for 15 minutes on a medium flame.

12) Then turn the stove off and leave the stuff for 15 minutes.

13) Your mutton biryani is ready.
